Roasted vegetables are naturally sweet and nutritious with beta carotene, lycopene, dietary fiber and protein. A perfect entrée for a summer evening that can be served with a variety leafy greens and fresh herbs. For a change, try topping with Kalamata olives or feta cheese.

The dressing adds richness to this salad by incorporating whole strawberries and balsamic vinegar. This versatile salad can be served as a side dish, or transformed into an entrée by adding legumes or grilled chicken and serving over salad greens. For variations, you can add diced avocado, blueberries or feta cheese.

Chia Fresca

This summer drink is a variation of infused water, commonly seen in Mexico. Chia seeds are added to an infused water and chilled for 20 minutes to allow the chia seeds to “swell”. Chia fresca is hydrating and provides minerals, dietary fiber and omega-3’s. Try with fresh mint and cucumber slices for a flavorful variation! 

Chocolate Bulgur “Rice” Pudding

Chocolate Bulgur “Rice” Pudding

By using bulgur instead of rice, this recipe is quicker to prepare than a traditional rice pudding. Unsweetened cocoa is used to make a chocolate variation. The pudding is topped with fresh strawberries with a hint of orange to enhance their natural flavor and garnished with toasted spiced almonds.
