Low-Carbohydrate and Plant-Based Dietary Effects on Vascular Health (Funding: Highland Hospital Foundation/philanthropic donors)

This is a randomized trial with a crossover design to investigate the short-term effects of two different dietary patterns on markers of vascular health. A low-carbohydrate diet and a whole-food, plant-based diet will be used. In addition to more traditional markers (cholesterol, blood pressure, inflammation), progenitor (blood vessel repair) cells and trimethylamine N-oxide will be assessed. Prepared meals provided. The trial is registered at https://clinicaltrials.gov/ct2/show/NCT05414851 (NCT05414851)

Whole-Food, Plant-Based Nutrition Among Women with Metastatic Breast Cancer: A Pilot Study of Recruitment, Retention, and Preliminary Changes in Biomarkers and Symptoms (Funding: Highland Hospital Foundation/philanthropic donors)

This is a randomized controlled trial that lays the groundwork for investigating how a plant-based diet and/or weight loss affects cancer and related biological problems (inflammation, cardiometabolic risk factors, etc.) and quality of life. Prepared meals provided. The trial is registered at https://clinicaltrials.gov/ct2/show/NCT03045289 (NCT03045289)

A Comparison of Whole Food Plant-Based Diet and Dietary Approaches to Stop Hypertension (DASH) Diet on the Effects of Insulin Requirements and Obesity Markers in Adults with Type 2 Diabetes (Funding: Highland Hospital Foundation/philanthropic donors)

This study is designed to understand the short-term effects of dietary change on advanced type 2 diabetes. Subjects cross over from a DASH diet to a whole-food, plant-based diet, back to a DASH diet, and changes in insulin requirements and various biomarkers are tracked. Prepared meals provided. The trial is registered at https://clinicaltrials.gov/ct2/show/NCT04048642 (NCT04048642)
